If your knowledge of cheesecake – not to be confused with the Spanish tarta de queso – stretches about as far as "baked or refrigerated?" Angelica Tcherassi is here to enlighten you, with her labor-of-love baking service Cheesecake 4 the Soul.

Arriving in Barcelona eight years ago from her native Colombia, life-long dessert queen and sweet tooth Tcherassi was surprised by an apparent dearth of cheesecake choices. Appalled that "many people in Spain thought there was only one flavor of cheesecake," she quickly set out to remedy the situation, putting her well-honed dessert skills to the test and attempting to come up with "the perfect cheesecake." After much trial and error, the pursuit of perfection yielded such success that what started out as "a personal challenge" quickly became "something so good I just had to share it." Tcherassi's cheesecakes became such a coveted addition to friends’ dinner parties and gatherings that without planning it, she realized she had a little business in her hands, and Cheesecake 4 the Soul was born.

With plans to open a shop in Barcelona underway, Cheesecake 4 the Soul is an online service whose mission is to deliver super fresh cheesecakes – choose from Original, Strawberry Sky, Coco-licious, Banana Blast, Lima Limon Twist or Almond Delight – all hand-crafted on demand at the “bakery lab” using their own original recipes. Once you have settled on a flavor, the online form is an easy few steps to pudding heaven. Tcherassi tells us that the secret to a good cheesecake, aside from using the best, freshest ingredients, and never, ever freezing it, is all about “putting your personal magic into it.” That, and a “whole lot of love.” We’re definitely going to take her word for it.
