I was lucky enough to try my first spritz wine cocktail in Venice, its birthplace. It’s a great drink for a hot afternoon, bracing and bitter. Lately it seems to be growing in popularity here in Barcelona. Try making a few for friends to work up an appetite before dinner.

1. Fill a tall glass (e.g. highball or tall tumbler) with ice.

2. Add a slice of a juicy orange.

3. Fill a little over half the glass with Prosecco (a dry Italian sparkling white wine) or dry cava. Use a freshly opened bottle.

4. Fill almost the rest of the glass with Aperol (an Italian aperitif similar to Campari)

5. Add a splash of sparkling water (e.g. from a siphon)

6. Garnish with a large green olive.

A properly made spritz will have an intense orange color at the base and be clearer at the top (resulting from the heavier Aperol sinking versus the wine).

This recipe comes courtesy of Pappa e Citta, one of the best places in the city to enjoy an Italian aperitif after work. They serve a small dish of free food with every drink from 6pm to 9pm every day (closed Mondays). It’s a tiny place, so get there early!
