I was lucky enough to try my first spritz wine cocktail in Venice, its birthplace. It’s a great drink for a hot afternoon, bracing and bitter. Lately it seems to be growing in popularity here in Barcelona. Try making a few for friends to work up an appetite before dinner.

Pappa e Citti

38 C/ Encarnació, Barcelona, Catalonia, 08012

    1. Fill a tall glass (e.g. highball or tall tumbler) with ice.

    2. Add a slice of a juicy orange.

    3. Fill a little over half the glass with Prosecco (a dry Italian sparkling white wine) or dry cava. Use a freshly opened bottle.

    4. Fill almost the rest of the glass with Aperol (an Italian aperitif similar to Campari)

    5. Add a splash of sparkling water (e.g. from a siphon)

    6. Garnish with a large green olive.

    A properly made spritz will have an intense orange color at the base and be clearer at the top (resulting from the heavier Aperol sinking versus the wine).

    This recipe comes courtesy of Pappa e Citti, one of the best places in the city to enjoy an Italian aperitif after work. They serve a small dish of free food with every drink from 6pm to 9pm every day (closed Mondays). It’s a tiny place, so get there early!

      In Venice you can drink it with Aperol but also with Campari (just as typical, but stronger and more bitter) with Select (sweeter than Campari) or with Cynar (stronger and very bitter). It's hard to find Select but Cynar and Campari can be found in most liquor stores. Oh, and use any sparkling white wine if you don't want ti waste a good Prosecco (in Venice it's done with cheaper wine unless you want to pay for a "Spritz con Prosecco".
