5,000 years after it was first brewed, tea is enjoying a little resurgence, with the world of cocktails experimenting with tea infusions. Green, red and black teas can be used a cocktail base; if you’re feeling a little creative, try one of these recipes:

    Chamomile and Honey Sour

40 ml. 42 Below Manuka Honey Vodka

    3 teaspoons of chamomile flowers

    20 ml. lemon juice

    15 ml. cane sugar

    15 ml. St. Germain liqueur

    1 egg white

    Lavender Bitters

Steep the chamomile flowers with vodka in a cocktail shaker for 4 to 5 seconds. Add lemon juice, cane sugar, St. Germain and egg white, shake and serve in a chilled glass. Add a dash of Lavender Bitters and decorate with a few more chamomile flowers.

This cocktail can be found at the Boutique Bar at the recently inaugurated five-star Ohla Hotel, serving excellent cocktails in an elegant, intimate atmosphere. The team, led by Giuseppe Santamaria and Max La Rocca, specialize in creating their own cocktails, as well serving up high-quality classics and variations.

And Tanqueray, no stranger to cocktail trends, recently launched a line called Tea Tonic, an array of teas designed to accompany its quadruple-distilled No. Ten premium gin. Choose from their flavors of tea – Juniper, Spices, Fresh Citrus, Chamomile or Balance – place the teabag in a glass with ice, add gin, steep for one minute and then add the tonic. Teatime was never so exciting.
